Chilli Paneer Gravy
Chilli Paneer Gravy is a mouth-watering Indo-Chinese dish made with soft paneer cubes cooked in a spicy, tangy sauce, perfect to be served with fried rice or noodles. Cut 200 grams of paneer into small cubes and set aside.

In a bowl, mix 2 tablespoons of cornflour with 2 tablespoons of water to make a smooth paste.

Heat 2 tablespoons of oil in a pan over medium heat. Add 1 teaspoon of finely chopped ginger and 1 teaspoon of finely chopped garlic. Sauté for a minute.

Add 1/4 cup of finely chopped onions and 1/4 cup of chopped capsicum. Cook for 2-3 minutes until they turn slightly soft.

Add 2 tablespoons of tomato ketchup, 1 tablespoon of soy sauce, 1 tablespoon of red chilli sauce, and 1/2 teaspoon of sugar. Mix well and cook for a minute.

Pour the cornflour paste into the pan and stir continuously to avoid lumps. Cook for 2 minutes until the sauce thickens.

Add the paneer cubes and 1/2 cup of water. Mix gently and cook for 3-4 minutes until the paneer absorbs the flavors.

Adjust salt and pepper according to taste. Garnish with chopped spring onions and serve hot.
