Chilli Mushroom Gravy
Chilli Mushroom Gravy is a spicy and flavorful Indo-Chinese dish that combines tender mushrooms with a rich, tangy sauce, perfect for pairing with rice or noodles. Ingredients: Mushroom, Soy sauce, Red chilli sauce, Cooking oil, Salt, Ginger, Tomato sauce, Corn starch, Spring onion, Green chilli, Garlic, Onion, Black pepper powder

Clean and cut 200 grams of mushrooms into quarters.

In a bowl, mix 2 tablespoons of cornflour with 4 tablespoons of water to make a smooth paste.

Heat 2 tablespoons of oil in a pan over medium heat. Add 1 teaspoon of finely chopped ginger and 1 teaspoon of finely chopped garlic. Sauté for a minute.

Add 1 finely chopped onion and 1 finely chopped green chilli. Sauté until the onion turns translucent.

Add the mushrooms and cook for 5-7 minutes until they release their moisture and become tender.

Add 1 tablespoon of soy sauce, 1 tablespoon of red chilli sauce, and 1 tablespoon of tomato ketchup. Mix well and cook for 2 minutes.

Pour the cornflour paste into the pan and stir continuously to avoid lumps. Cook for 3-4 minutes until the sauce thickens.

Add salt to taste and 1/4 teaspoon of black pepper powder. Mix well.

Garnish with chopped spring onion greens and serve hot with rice or noodles.
