In a large bowl, combine 3 cups of chickpeas, 1 diced red bell pepper, 1 diced yellow bell pepper, and 1 small diced red onion.
Add 1 inch of peeled and grated ginger to the mixture.
Sprinkle 1 tablespoon of ground cumin over the salad.
Add 1 tablespoon of sugar to the mixture.
Pour 3 tablespoons of lemon juice over the salad.
Mix all ingredients well.
Season the salad with salt and pepper to taste.
If desired, garnish with cilantro leaves before serving.
