Chickpea And Paneer Curry
This savory chickpea and paneer curry is sure to tantalize your taste buds with its rich, flavorful spices! Ingredients: Paneer, Kabuli chana, Garam masala, Chilli powder, Coconut milk, Mustard seeds, Garlic, Canola oil, Pickle, Cumin

Drain 500g of canned chickpeas and set aside.

Cut 350g of paneer cheese into half-inch cubes.

Chop 1 large red onion and 3 garlic cloves.

Heat 1 tablespoon of canola oil in a non-stick skillet and fry paneer until browned and crispy.

Transfer the fried paneer to a plate.

In a bowl, mix 1 tablespoon garam masala, 1 tablespoon mustard seed, 1 teaspoon turmeric, 1/2 - 1 teaspoon chili powder, and 1/2 teaspoon cumin.

Heat another tablespoon of canola oil in a skillet and add mustard seeds, frying until they crack.

Add chopped onion and garlic, frying until translucent.

Add the mixed spices and roast until fragrant, being careful not to burn them.

Stir in the drained chickpeas, ensuring they are covered with spices.

Add 250g of coconut milk to the skillet.

Stir in 1-2 tablespoons of pickle, dissolving it into the mixture.

Allow the curry to simmer until it reaches a creamy consistency.

Add the fried paneer cubes and heat through.

Season with salt and pepper to taste, and add vegetable broth if desired.
