Chicken & Tomato Rice
This delicious dish of chicken and tomato rice is sure to tantalize your taste buds! Ingredients: Rice, Chicken, Green cardamom, Ginger, Red chilli powder, Salt, Garlic, Ghee, Clove, Onion, Bay leaf, Tomato sauce

Rub 1 1/2 boneless cut chicken with salt, 1 tablespoon chopped ginger, 1 tablespoon chopped garlic, and 1 tablespoon ghee. Set aside.

Heat the remaining 2 tablespoons of ghee in a large saucepan or Dutch oven.

Add 2 bay leaves, 2 green cardamom pods, and 2 cloves to the heated ghee. Sizzle for a few seconds.

Add the marinated chicken to the saucepan and brown all over.

Add 1 large chopped onion and stir-fry for 2 to 3 minutes.

Add the remaining 1 tablespoon chopped ginger, 1 tablespoon red chili powder, and 3/4 cup rice to the saucepan. Stir gently.

Add salt, 3/4 cup tomato sauce, and 3/4 cup water to the mixture. Mix well.

Bring the mixture to a boil, then reduce heat to low or simmer and cover the pan.

Cook for 10 to 12 minutes or until rice is tender.

Remove the lid, fluff the rice with a fork, and let stand for 5 minutes before serving.
