Chicken Spinach Soup
This savory soup is sure to hit the spot! Try our delicious chicken spinach soup for a flavorful and nutritious meal.

Wash and shred 2 bunches of spinach.

Wash and cut 200g of boneless chicken into small dices.

Peel and finely chop 1 medium onion and 2-3 cloves of garlic.

Boil 2 medium potatoes until tender, then peel and mash them.

In a soup pot, heat 1 tablespoon of butter and 3 tablespoons of oil.

Add 1 bay leaf, chopped garlic, and onion, then sauté.

Add the shredded spinach and cook for a few minutes.

Discard the bay leaf and add salt, 6-7 crushed peppercorns, and some water.

Cook for about 10 minutes on medium heat.

Add the mashed potatoes and cook for 3 more minutes.

Remove from heat and add 1/4 cup of milk.

Blend the mixture in a blender to obtain spinach purée.

Remove the crusts from 2 bread slices and cut them into croutons.

Dilute the spinach purée with milk or water as needed.

Heat the spinach purée soup in a pan.

In another pan, cook the croutons until they begin to change color.

Add a little oil to the croutons and cook until crisp, then drain on paper towels.

In a separate pan, heat some oil and add the diced chicken, cooking until done.

Season the cooked chicken with salt and black pepper to taste.

Flavor the croutons with 1/4 teaspoon of oregano and 1 teaspoon of red chili pepper flakes.

To serve, place the chicken pieces in a soup bowl, pour the soup over them, and garnish with bread croutons. Serve hot.
