Chicken Singapore Fried Rice
Chicken Singapore Fried Rice is a delicious Indo-Chinese fusion dish that combines aromatic spices, tender chicken, and stir-fried rice for a mouthwatering meal. Ingredients: Basmati rice, Boneless chicken, Beans, Corn starch, Spring onion, Capsicum, Tomato sauce, Soy sauce, Ginger, Black pepper powder, Garam masala, Onion, Carrot, Garlic, Red chilli sauce, Cooking oil

In a bowl, marinate 250 grams of boneless chicken pieces with 1 tablespoon of soy sauce, 1 tablespoon of cornflour, and a pinch of salt. Set aside for 15-20 minutes.

Cook 200 grams of basmati rice in boiling water with a pinch of salt until 90% cooked. Drain the water and spread the rice on a plate to cool.

In a wok or large frying pan, heat 2 tablespoons of oil over medium-high heat. Add the marinated chicken pieces and stir-fry until cooked through. Remove the chicken from the wok and set aside.

In the same wok, add 1 tablespoon of oil and sauté 1 finely chopped onion, 1 tablespoon of minced garlic, and 1 tablespoon of minced ginger until fragrant.

Add 1/2 cup of chopped bell peppers, 1/2 cup of chopped carrots, and 1/2 cup of chopped beans to the wok. Stir-fry the vegetables for 3-4 minutes until they are slightly tender.

Add the cooked chicken back to the wok along with 1 tablespoon of soy sauce, 1 tablespoon of red chili sauce, 1 tablespoon of tomato ketchup, and 1/2 teaspoon of black pepper powder. Stir well to combine.

Add the cooked rice to the wok and mix gently, ensuring the rice is well coated with the sauces and vegetables.

Finally, add 1/2 teaspoon of garam masala powder and 2 tablespoons of chopped spring onions. Stir-fry for another 2 minutes and then turn off the heat.
