Chicken Manchurian Gravy
Chicken Manchurian Gravy is a popular Indo-Chinese dish with a perfect blend of spicy, tangy, and sweet flavors, served with a thick, luscious gravy. Ingredients: Boneless chicken, Black pepper powder, Ginger, Ginger garlic paste, Tomato sauce, Capsicum, Spring onion, Corn starch, Green chilli, Vinegar, Red chilli sauce, Maida, Cooking oil, Soy sauce, Garlic, Onion

In a bowl, mix 250 grams of boneless chicken (cut into small cubes) with 2 tablespoons of cornflour, 1 tablespoon of all-purpose flour (maida), 1 teaspoon of ginger-garlic paste, 1/2 teaspoon of black pepper powder, and salt to taste. Add a little water if needed to make a thick batter. Marinate the chicken for 15-20 minutes.

Heat oil in a deep frying pan and deep fry the marinated chicken pieces until golden brown and crispy. Drain on a paper towel and set aside.

In another pan, heat 2 tablespoons of oil and sauté 1 tablespoon of finely chopped garlic, 1 tablespoon of finely chopped ginger, and 2-3 chopped green chilies for a minute.

Add 1/4 cup of finely chopped onions and 1/4 cup of chopped capsicum. Cook for 2-3 minutes until the vegetables are slightly softened.

In a small bowl, mix 2 tablespoons of tomato ketchup, 2 tablespoons of soy sauce, 1 tablespoon of red chili sauce, and 1/2 tablespoon of vinegar. Pour this sauce mixture into the pan and cook for a minute.

Dissolve 1 tablespoon of cornflour in 1/4 cup of water and add it to the pan. Stir well and cook until the sauce thickens.

Add 1 cup of water to the pan and bring the gravy to a boil. Adjust salt and pepper according to taste.

Add the fried chicken pieces to the gravy and cook for 2-3 minutes until the chicken absorbs the flavors.

Garnish with chopped spring onion greens and serve hot with fried rice or noodles.
