Chicken Lemon Coriander Soup
Chicken Lemon Coriander Soup is a refreshing and flavorful soup that combines the tanginess of lemon with the aroma of fresh coriander, making it a perfect appetizer or a light meal. In a large pot, heat 1 tablespoon of oil and sauté 200 grams of finely chopped boneless chicken pieces until cooked. Set aside.

In the same pot, heat another tablespoon of oil and add 1 teaspoon of finely chopped garlic and 1 teaspoon of finely chopped ginger. Sauté for a minute.

Add 1 finely chopped onion and cook until it turns translucent.

Add 1 finely chopped carrot and 1 finely chopped capsicum. Cook for 2-3 minutes.

Pour in 1 litre of chicken stock and bring it to a boil.

Add the cooked chicken pieces, 1/4 cup of freshly chopped coriander leaves, and salt to taste. Simmer for 10 minutes.

In a small bowl, mix 1 tablespoon of cornflour with 2 tablespoons of water to form a smooth paste. Add this to the soup and stir well. Cook for another 5 minutes until the soup thickens slightly.

Turn off the heat and add the juice of 1 lemon. Stir well and adjust the salt if needed.

Garnish with more chopped coriander leaves and serve hot.
