Chicken Hakka Noodles
Chicken Hakka Noodles is a delicious Indo-Chinese dish that combines tender chicken pieces with perfectly cooked noodles and a medley of colorful vegetables, all tossed in a flavorful sauce. Ingredients: Boneless chicken, Hakka noodles, Capsicum, Cooking oil, Soy sauce, Onion, Corn starch, Chilli sauce, Vinegar, Spring onion, Cabbage, Ginger, Black pepper powder, Garlic, Carrot

Boil 200 grams of Hakka noodles as per the instructions on the packet. Drain the water and rinse the noodles with cold water. Set aside.

Cut 250 grams of boneless chicken into thin strips and marinate with 1 tablespoon of soy sauce, 1 tablespoon of cornflour, and a pinch of salt for 15 minutes.

Heat 2 tablespoons of oil in a wok or large pan on high heat. Add the marinated chicken and stir-fry for 3-4 minutes until cooked. Remove the chicken from the wok and set aside.

In the same wok, add 1 tablespoon of oil and stir-fry 1 chopped onion, 1 chopped capsicum, 1 chopped carrot, and 100 grams of shredded cabbage for 2-3 minutes.

Add 2 cloves of minced garlic and 1 teaspoon of grated ginger to the vegetables and stir-fry for another minute.

Add the cooked chicken back to the wok and mix well with the vegetables.

Add the boiled noodles to the wok, followed by 2 tablespoons of soy sauce, 1 tablespoon of vinegar, 1 tablespoon of chili sauce, and 1 teaspoon of black pepper powder. Toss everything together until the noodles are well coated with the sauces and the ingredients are evenly distributed.

Garnish with chopped spring onion greens and serve hot.
