Chicken Chowmein
Chicken Chowmein is a delicious Indo-Chinese dish that combines tender chicken, stir-fried vegetables, and perfectly cooked noodles in a savory sauce. Ingredients: Boneless chicken, Hakka noodles, Cooking oil, Carrot, Capsicum, Black pepper powder, Corn starch, Cabbage, Vinegar, Onion, Tomato sauce, Red chilli sauce, Spring onion, Soy sauce

Boil 200 grams of Hakka noodles as per the instructions on the packet. Drain and rinse with cold water. Set aside.

Cut 250 grams of boneless chicken into thin strips and marinate with 1 tablespoon of soy sauce, 1 tablespoon of cornstarch, and a pinch of salt for 15 minutes.

Heat 2 tablespoons of oil in a wok or large pan over medium-high heat. Add the marinated chicken and stir-fry until cooked through. Remove from the wok and set aside.

In the same wok, add 1 tablespoon of oil and stir-fry 1 chopped onion, 1 julienned carrot, 1/2 cup of sliced bell peppers, and 1/2 cup of shredded cabbage for 2-3 minutes.

Add the cooked chicken back to the wok along with the boiled noodles.

In a small bowl, mix 2 tablespoons of soy sauce, 1 tablespoon of tomato ketchup, 1 tablespoon of red chili sauce, 1 teaspoon of vinegar, and 1/2 teaspoon of black pepper powder. Pour this sauce mixture over the noodles and stir-fry everything together for 2-3 minutes until well combined.

Garnish with chopped spring onion greens and serve hot.
