This classic Puerto Rican dish is a delicious combination of tender chicken and fluffy rice - a perfect meal for any occasion! Ingredients: Chicken drumstick, Rice, Onion, Tomato sauce, Vegetable oil, Capers, Green olives

In a large saucepan, heat 1 tablespoon of vegetable oil over medium heat.

Add 5 chicken drumsticks, 1 small chopped onion, 1/2 cup pitted green olives, and 2 tablespoons capers to the saucepan.

Pour in a little juice from the olives for extra flavor.

Sauté the mixture until the onion turns clear and the chicken begins to brown.

Add 1 can of tomato sauce to the mixture and continue to sauté until lightly cooked.

Reduce heat to low.

In a separate small saucepan, melt 3 tablespoons of shortening over medium heat.

Add 2 tablespoons of achiote seeds to the shortening.

Once the shortening turns red, remove from heat and strain out the seeds.

Mix the red oil into the chicken and tomato mixture.

Add 4 cups of boiling water to the mixture and increase the heat to medium-high.

Bring the mixture to a boil, stirring well.

Add 4 cups of uncooked jasmine rice to the boiling mixture.

Continue boiling for about 3 minutes.

Reduce heat to low and cook for about 30 minutes, or until the rice is tender and has absorbed the liquid, stirring occasionally.

Remove from heat and let stand for 10 minutes.

Transfer the mixture to a large bowl and serve immediately.
