Take 500 grams of fresh curd and place it in a muslin cloth. Tie the cloth and hang it for 4-5 hours to drain the whey and get thick hung curd.

In a mixing bowl, add the hung curd and 100 grams of powdered sugar. Mix well until smooth and creamy.

Pit and chop 200 grams of fresh cherries into small pieces. Reserve some whole cherries for garnishing.

Gently fold the chopped cherries into the hung curd mixture.

Add 1/2 teaspoon of cardamom powder and mix well.

Refrigerate the cherry shrikhand for at least 2 hours to allow the flavors to blend.

Serve chilled, garnished with whole cherries and a few saffron strands or chopped nuts (optional).
