Preheat your oven to 180°C. Line a baking sheet with parchment paper.

In a large bowl, combine 250 grams of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt. Mix well.

In another bowl, whisk together 150 grams of granulated sugar, 2 large eggs, and 1 teaspoon of almond extract until smooth.

Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.

Fold in 100 grams of chopped dried cherries and 100 grams of chopped almonds, ensuring they are evenly distributed throughout the dough.

Divide the dough in half and shape each portion into a log, approximately 30 cm long and 5 cm wide. Place the logs on the prepared baking sheet, leaving enough space between them.

Bake for 25-30 minutes, or until the logs are lightly golden and firm to the touch. Remove from the oven and let them cool for 10 minutes.

Using a sharp knife, carefully slice the logs diagonally into 1.5 cm thick slices. Place the slices back on the baking sheet, cut side down.

Bake for an additional 10-12 minutes, or until the biscotti are crisp and golden. Allow them to cool completely on a wire rack before serving.
