Wash and peel 500 grams of potatoes, then cut them into thin, long strips (approximately 1 cm thick).
Soak the potato strips in cold water for 15-20 minutes to remove excess starch. Drain and pat dry with a clean kitchen towel.
Heat oil in a deep frying pan or kadai over medium heat. Once the oil reaches 180°C, carefully add the potato strips in batches and fry until they turn golden brown and crispy. Remove the fries from the oil and place them on a paper towel to absorb excess oil.
Preheat your oven to 180°C. Arrange the fried potato strips on a baking tray lined with parchment paper.
Grate 200 grams of processed cheese or mozzarella cheese and evenly sprinkle it over the fries.
Bake the fries in the preheated oven for 5-7 minutes, or until the cheese has melted and turned slightly golden.
Remove the cheese French fries from the oven and serve immediately with ketchup or your favorite dipping sauce.
