Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
Wash and chop 1 medium-sized cauliflower (approx. 600 grams) into small florets. Pulse the florets in a food processor until they resemble a rice-like texture.
Transfer the cauliflower rice to a microwave-safe bowl and microwave for 4-5 minutes on high. Allow it to cool for a few minutes.
Place the cooked cauliflower rice in a clean kitchen towel and squeeze out as much excess moisture as possible. This step is crucial for a firm crust.
In a large mixing bowl, combine the drained cauliflower rice, 50 grams of grated mozzarella cheese, 30 grams of grated Parmesan cheese, 1 lightly beaten egg, 1 teaspoon of dried oregano, 1 teaspoon of dried basil, and salt to taste. Mix well to form a dough-like consistency.
Spread the cauliflower dough onto the prepared baking sheet, shaping it into a round or rectangular pizza crust about 1 cm thick.
Bake the crust in the preheated oven for 20-25 minutes, or until it turns golden brown and firm.
Remove the crust from the oven and add your desired pizza toppings. Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
