Cauliflower Cheese

Clean and cut 1 medium-sized cauliflower (about 500 grams) into small florets. Wash them thoroughly and set aside.

In a large pot, bring 1 litre of water to a boil. Add 1 teaspoon of salt and the cauliflower florets. Cook for 5-7 minutes until the cauliflower is tender but not mushy. Drain the cauliflower and set aside.

In a separate pan, heat 2 tablespoons of butter over medium heat. Add 2 tablespoons of maida (all-purpose flour) and cook for 2 minutes, stirring continuously to avoid lumps.

Gradually add 500 ml of milk to the pan, whisking continuously to create a smooth sauce. Cook for 5 minutes, or until the sauce thickens.

Lower the heat and add 100 grams of grated cheese (preferably cheddar or processed cheese), 1/2 teaspoon of black pepper powder, and salt to taste. Stir until the cheese melts and the sauce is smooth.

Preheat your oven to 180°C (350°F).

In a baking dish, arrange the cooked cauliflower florets in a single layer. Pour the cheese sauce evenly over the cauliflower, ensuring all the florets are covered.

Sprinkle an additional 50 grams of grated cheese on top of the cauliflower and sauce.

Bake in the preheated oven for 20-25 minutes, or until the cheese is golden and bubbly.

Remove from the oven and let it cool for a few minutes before serving.
