In a food processor, add 200 grams of cashews and blend until they form a coarse powder.
Add 100 grams of desiccated coconut, 50 grams of pitted dates, 2 tablespoons of honey, and 1 teaspoon of vanilla extract to the food processor. Blend until the mixture becomes sticky and holds together.
Scoop out the mixture and roll it into small balls, about the size of a tablespoon. If the mixture is too dry, add a little more honey to help it stick together.
In a separate shallow dish, spread out 50 grams of desiccated coconut. Roll the energy balls in the coconut to coat them evenly.
Place the coated energy balls on a plate or tray and refrigerate for at least 30 minutes to firm up before serving.
