In a medium saucepan, combine 1 cup grain rice and 2 cups water.
Bring the mixture to a boil over high heat.
Reduce heat to low, cover with a lid, and steam until rice is tender and cooked, about 20 minutes.
Meanwhile, pulverize 1/4 cup roasted peanuts in a blender and set aside.
In a large skillet, melt 1 tablespoon butter over medium-high heat.
Saute 1 sliced onion until golden brown.
Stir in 1 teaspoon minced gingerroot, 3/4 cup grated carrot, and salt to taste.
Reduce heat to low, cover, and steam for 5 minutes.
Stir in pepper and the pulverized peanuts.
When rice is done, add it to the skillet and gently stir to combine with other ingredients.
Garnish with chopped cilantro and serve hot.
