Wash and peel 500 grams of carrots. Grate the carrots using a medium-sized grater and place them in a large mixing bowl.
Add 100 grams of raisins to the grated carrots and mix well.
In a separate small bowl, prepare the dressing by combining 2 tablespoons of lemon juice, 1 tablespoon of honey, 1/4 teaspoon of black pepper powder, and a pinch of salt. Mix well until the honey is dissolved.
Pour the dressing over the carrot and raisin mixture. Toss the salad gently to ensure that the dressing is evenly distributed.
Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld.
Before serving, garnish the salad with a handful of chopped coriander leaves or mint leaves for added freshness.
