Burnt Garlic Noodles
Burnt garlic noodles is a delicious Indo-Chinese dish with a unique smoky flavor from the caramelized garlic, tossed with perfectly cooked noodles and a blend of sauces. Ingredients: Clove, Plain noodles, Soy sauce, Onion, Tomato sauce, Green chilli, Capsicum, Spring onion, Red chilli sauce, Black pepper powder, Cooking oil, Cabbage

Boil 200 grams of noodles as per the instructions on the packet. Drain the water and rinse the noodles with cold water. Set aside.

In a pan, heat 2 tablespoons of oil. Add 10-12 finely chopped garlic cloves and sauté on low heat until they turn golden brown and slightly crispy. Remove half of the fried garlic and set aside for garnishing.

In the same pan, add 1 finely chopped onion and 1 finely chopped green chili. Sauté until the onion turns translucent.

Add 1/4 cup of chopped bell peppers (red, yellow, and green) and 1/4 cup of shredded cabbage. Stir-fry for 2-3 minutes on high heat.

Add 2 tablespoons of soy sauce, 1 tablespoon of red chili sauce, 1 tablespoon of tomato ketchup, and 1/2 teaspoon of black pepper powder. Mix well.

Add the cooked noodles to the pan and toss well to coat the noodles with the sauce and vegetables.

Garnish with the reserved fried garlic and 2 tablespoons of chopped spring onion greens. Serve hot.
