Preheat your oven to 180°C (350°F). Take 1 loaf of Italian bread (approximately 450 grams) and cut it into 1.5 cm thick slices.
In a small bowl, mix together 60 ml of olive oil and 2 minced garlic cloves. Brush the garlic-infused oil onto both sides of each bread slice.
Place the bread slices on a baking sheet and bake for 10-12 minutes, or until they are golden brown and crispy. Remove from the oven and let them cool slightly.
In a medium-sized bowl, combine 500 grams of finely chopped ripe tomatoes, 1/4 cup of finely chopped fresh basil, 1/4 cup of finely chopped red onion, 2 minced garlic cloves, 1 tablespoon of balsamic vinegar, and 2 tablespoons of olive oil. Season with salt and black pepper to taste.
Spoon the tomato-basil mixture onto the toasted bread slices and serve immediately.
