Bread Bowl Soup
Bread bowl soup is a delicious and comforting dish where a warm, creamy soup is served in a hollowed-out bread loaf, making it an edible bowl. It's a perfect meal for a cozy evening. Choose a round, crusty bread loaf (preferably sourdough) and cut off the top part to create a lid. Scoop out the inside of the bread, leaving a 2 cm thick wall to form the bowl. Keep the scooped-out bread aside for serving or other uses.

Preheat your oven to 180°C. Place the hollowed-out bread and its lid on a baking tray and bake for 10-15 minutes, or until the inside of the bread bowl is slightly crispy. Remove from the oven and set aside.

In a large saucepan, heat 2 tablespoons of oil over medium heat. Add 1 finely chopped onion and 2 minced garlic cloves, and sauté until the onion is translucent.

Add 500 grams of chopped mixed vegetables (such as carrots, potatoes, and peas) to the saucepan and cook for 5-7 minutes, stirring occasionally.

Stir in 1 liter of vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15-20 minutes, or until the vegetables are tender.

In a separate bowl, mix 3 tablespoons of cornstarch with 3 tablespoons of water to form a smooth paste. Stir this paste into the simmering soup to thicken it.

Add salt and pepper to taste, along with any desired herbs and spices (such as thyme, oregano, or parsley).

Carefully ladle the hot soup into the prepared bread bowl. Serve immediately with the bread lid and scooped-out bread pieces on the side.
