Beetroot Soup
Beetroot soup is a vibrant and nutritious dish that combines the earthy flavors of beetroot with a blend of aromatic spices. This delicious soup is perfect for a healthy and comforting meal. Ingredients: Beetroot, Red chilli powder, Turmeric powder, Onion, Garam masala, Cumin seeds, Ginger garlic paste, Salt, Cooking oil

Wash and peel 500 grams of beetroot, then chop them into small cubes.

In a pressure cooker, heat 2 tablespoons of oil over medium heat. Add 1 teaspoon of cumin seeds and let them crackle.

Add 1 finely chopped onion and sauté until it turns golden brown.

Add 1 tablespoon of ginger-garlic paste and sauté for another minute.

Add the chopped beetroot, 1/4 teaspoon of turmeric powder, 1/2 teaspoon of red chili powder, and salt to taste. Mix well and cook for 2-3 minutes.

Add 750 ml of water to the pressure cooker and close the lid. Cook for 3-4 whistles or until the beetroot is soft and tender.

Once the pressure is released, open the cooker and let the mixture cool down a bit.

Blend the beetroot mixture using a hand blender or mixer grinder until smooth.

Pour the blended soup back into the pressure cooker and heat it over low flame. Adjust the consistency by adding more water if required.

Add 1/2 teaspoon of garam masala and 1 tablespoon of lemon juice. Stir well and cook for another 2-3 minutes.

Garnish the beetroot soup with fresh coriander leaves and serve hot.
