Combine 1/4 cup chopped apricots and 2 slices of lemon zest in 2 cups of cold water. Set aside.

In a medium saucepan, melt 2 tablespoons of unsalted butter over medium heat.

Add 1 teaspoon of garam masala and toast, stirring for about 1 minute until fragrant.

Add 1 medium diced onion and 1/4 teaspoon of kosher salt. Cook, stirring occasionally, for about 6 minutes until the onion is tender and translucent.

Stir in 1 cup of uncooked, rinsed, and drained basmati rice. Cook, stirring occasionally, for about 4 minutes until it begins to brown.

Stir in the water with apricots, lemon zest, remaining salt, and ground black pepper to taste. Bring to a simmer.

Reduce heat to low, wrap a clean dish towel around the saucepan lid, and cover the saucepan.

In the meantime, toast the pistachios and set aside.

Cook the rice for 10 minutes, then set aside for 5 minutes undisturbed. Remove the lid and fluff with a fork.

Mound the pilaf on a serving dish, tear 1/3 cup of mint leaves over it, and top with 1/4 cup of toasted unsalted pistachios.
