Barnyard Millet Uttapam
Barnyard Millet Uttapam is a healthy and delicious South Indian dish made with barnyard millet, a nutritious and gluten-free grain. It's perfect for breakfast or a light meal, served with chutney or sambar. Rinse 1 cup of barnyard millet and soak it in water for 4-5 hours.

Drain the water and grind the soaked millet with 1/2 cup of curd and a little water to make a smooth batter. The consistency should be similar to dosa batter.

Add 1/2 teaspoon of salt to the batter and mix well. Allow the batter to ferment for 6-8 hours or overnight.

Finely chop 1 onion, 1 tomato, 1 green chili, and a handful of coriander leaves.

Heat a non-stick tawa or griddle over medium heat. Grease it with a few drops of oil.

Pour a ladleful of batter onto the tawa and spread it evenly in a circular motion to form a thick pancake.

Sprinkle the chopped onion, tomato, green chili, and coriander leaves over the batter.

Drizzle a teaspoon of oil around the edges of the uttapam and cook it on medium heat until the bottom turns golden brown.

Flip the uttapam and cook the other side for 2-3 minutes until it turns golden brown.

Remove the uttapam from the tawa and serve hot with coconut chutney or sambar.
