Baby Corn Manchurian
Baby corn Manchurian is a delicious Indo-Chinese appetizer that combines crispy fried baby corn with a tangy, spicy sauce. It's perfect for parties or as a tasty snack. Ingredients: Baby corn, Salt, Capsicum, Corn starch, Garlic, Cooking oil, Black pepper powder, Spring onion, Tomato sauce, Red chilli sauce, Soy sauce, Onion, Ginger garlic paste, Vinegar, Green chilli, Ginger, Maida

Wash and clean 250 grams of baby corn. Cut them into bite-sized pieces and set aside.

In a bowl, mix 3 tablespoons of cornflour, 3 tablespoons of all-purpose flour (maida), 1/2 teaspoon of ginger-garlic paste, 1/4 teaspoon of black pepper powder, and salt to taste. Add water gradually to make a thick batter.

Heat oil in a deep frying pan or kadai. Dip the baby corn pieces in the batter and deep fry them until they turn golden brown. Remove from oil and place them on a paper towel to absorb excess oil.

In another pan, heat 2 tablespoons of oil. Add 1 tablespoon of finely chopped garlic, 1 tablespoon of finely chopped ginger, and 2 finely chopped green chilies. Sauté for a minute.

Add 1/4 cup of finely chopped onions and 1/4 cup of finely chopped capsicum. Cook for 2-3 minutes until the onions turn translucent.

In a small bowl, mix 2 tablespoons of tomato ketchup, 1 tablespoon of soy sauce, 1 tablespoon of red chili sauce, and 1/2 tablespoon of vinegar. Pour this sauce mixture into the pan and cook for a minute.

Dissolve 1 tablespoon of cornflour in 1/4 cup of water and add it to the pan. Cook until the sauce thickens.

Add the fried baby corn to the sauce and mix well. Cook for another 2-3 minutes until the baby corn is well coated with the sauce.

Garnish with chopped spring onion greens and serve hot.
