Baby Corn Dry
Baby corn dry is a delicious and crunchy appetizer that is perfect for parties or as a side dish. It is made with crispy fried baby corn tossed in a flavorful mix of spices and sauces. Ingredients: Baby corn, Cooking oil, Red chilli powder, Soy sauce, Capsicum, Spring onion, Red chilli sauce, Salt, Maida, Corn starch, Black pepper powder, Tomato sauce, Garlic, Ginger, Green chilli, Onion

Wash and clean 250 grams of baby corn. Cut them into halves if they are too long.

In a mixing bowl, add 3 tablespoons of cornflour, 3 tablespoons of all-purpose flour (maida), 1/2 teaspoon of red chili powder, 1/4 teaspoon of black pepper powder, and salt to taste. Mix well.

Add water gradually to make a thick batter. Dip the baby corn pieces in the batter, ensuring they are well coated.

Heat oil in a deep frying pan. Once the oil is hot, carefully drop the batter-coated baby corn pieces and deep fry them until they turn golden brown and crispy. Remove them from the oil and place them on a paper towel to drain excess oil.

In another pan, heat 1 tablespoon of oil. Add 1 teaspoon of finely chopped ginger, 1 teaspoon of finely chopped garlic, and 2 finely chopped green chilies. Sauté for a minute.

Add 1/4 cup of finely chopped onions and sauté until they turn translucent.

Add 1/4 cup of finely chopped capsicum and cook for 2 minutes.

Add 2 tablespoons of tomato ketchup, 1 tablespoon of red chili sauce, 1 tablespoon of soy sauce, and salt to taste. Mix well and cook for a minute.

Add the fried baby corn to the pan and toss well to coat them with the sauce mixture. Cook for 2-3 minutes.

Garnish with chopped spring onion greens and serve hot.
