Slice a 200-gram baguette in half lengthwise and toast it in a preheated oven at 180°C for 5-7 minutes, or until it's crispy and golden brown.
In a pan, heat 1 tablespoon of oil over medium heat. Crack 2 eggs into the pan and cook them sunny-side up or as per your preference. Season with salt and pepper to taste.
Meanwhile, peel and pit 1 ripe avocado. Mash the avocado in a bowl, adding a pinch of salt, a squeeze of lemon juice, and a dash of black pepper.
Spread the mashed avocado evenly onto the toasted baguette halves.
Place the cooked eggs on top of the avocado layer.
Optionally, garnish with chopped coriander leaves or parsley and serve immediately.
