Take 1 large pomegranate and remove the seeds (arils) carefully. Rinse them gently and set aside in a bowl.
Finely chop 1 small onion, 1 small tomato, and 1 green chili. Add them to the bowl with pomegranate seeds.
Add 1 tablespoon of finely chopped fresh coriander leaves and 1 tablespoon of finely chopped fresh mint leaves to the bowl.
In a small bowl, mix 1 teaspoon chaat masala, 1/2 teaspoon roasted cumin powder, 1/2 teaspoon red chili powder, and 1/2 teaspoon black salt.
Sprinkle the spice mix over the pomegranate mixture and mix well.
Squeeze the juice of 1 small lemon over the chaat and mix gently.
Taste and adjust the seasoning if needed. Refrigerate for 15-20 minutes to let the flavors meld.
Serve chilled, garnished with a few more fresh coriander and mint leaves.
