In a large bowl, mix 2 cups of whole wheat flour, 1/2 teaspoon salt, and 1 tablespoon oil. Gradually add water and knead the dough until it becomes soft and pliable. Cover the dough and let it rest for 20 minutes.
In another bowl, combine 2 medium-sized boiled and mashed potatoes, 1 finely chopped onion, 1/2 teaspoon grated ginger, 1 finely chopped green chili, 1/2 teaspoon red chili powder, 1/2 teaspoon garam masala, 1/2 teaspoon amchur powder, 1/4 teaspoon turmeric powder, and salt to taste. Mix well to form the stuffing.
Divide the dough into equal portions and roll each portion into a small circle. Place a portion of the stuffing in the center of the circle and fold the edges over the stuffing, sealing it completely.
Roll out the stuffed dough ball into a slightly thick paratha, taking care not to let the stuffing come out.
Heat a tawa or griddle over medium heat. Place the paratha on the tawa and cook until golden brown spots appear on one side. Flip the paratha and cook the other side, applying some ghee or oil on both sides.
Press the paratha gently with a spatula to ensure even cooking. Cook until both sides are golden brown and crispy.
Serve hot with yogurt, pickle, or a side of your choice.
