Aloo Matar Paneer
This creamy, flavorful dish is a delicious blend of potatoes, peas, and paneer - a perfect mix of textures and tastes! Ingredients: Peas, Paneer, Ginger, Butter, Honey, Coriander seeds, Bay leaf, Tomato, Salt, Cassia bark, Potato, Vegetable oil, Chilli powder, Onion, Green cardamom, Garlic, Cumin, Clove, Fenugreek

In a blender or food processor, puree 4 cloves of garlic and 1 piece of ginger until smooth.

Heat 2 tablespoons of vegetable oil in a large saucepan over medium heat.

Add 2 bay leaves, 1 piece of cinnamon, 1 teaspoon of coriander seeds, 6 black peppercorns, 4 green cardamom pods, and 4 cloves to the hot oil.

Cook and stir the spices until they change color and become fragrant, about 1 to 2 minutes.

Add 1 large minced onion and 1/2 teaspoon of salt to the saucepan.

Cook and stir until the onion has softened, about 5 minutes.

Stir in the garlic-ginger puree and 1 cut green chile pepper.

Cook and stir until the chile pepper is tender, 1 to 2 minutes more.

Add 2 diced tomatoes to the onion mixture.

If the mixture becomes too thick, add 1/2 cup of water.

Season with 2 teaspoons of chili powder and 1 teaspoon of ground cumin.

Remove the tomato mixture from heat and allow it to cool for a few minutes.

Transfer the mixture to the blender or food processor and puree until smooth.

Pour the sauce into a saucepan and add 2 tablespoons of butter and 1 teaspoon of ground fenugreek.

Bring the sauce to a simmer over medium heat.

Stir in 1 cut russet potato and cook until nearly tender, 10 to 15 minutes.

Add 250 grams of cut paneer and 1/2 cup of frozen peas to the saucepan.

Continue to simmer until the potatoes and peas are tender, about 5 minutes more.

Stir in 2 teaspoons of honey and the remaining 1 teaspoon of salt.
