Choose 4 ripe mangoes (preferably Alphonso or Kesar variety), wash them thoroughly, and peel the skin.
Cut the mangoes into small pieces, discarding the seed.
In a blender, add the mango pieces and blend until you get a smooth pulp.
Add 100 grams of powdered sugar (adjust according to the sweetness of the mangoes) and a pinch of saffron strands (optional) to the mango pulp. Blend again for a few seconds to mix well.
Pour the aamras into a bowl and refrigerate for at least 1 hour to chill.
Before serving, garnish with a few chopped pistachios or almonds (optional).
