In a large bowl, beat 6 egg yolks until they become light in colour.

Gradually add 3/4 cup of sugar and continue to beat until it is completely dissolved.

Add 2 cups of milk, 2 cups of cream, 1 teaspoon of vanilla extract and 1/4 teaspoon of ground nutmeg and stir to combine.

In a separate bowl, beat 6 egg whites until soft peaks form.

With the mixer still running, gradually add 1/4 cup of sugar and beat until stiff peaks form.
