Start by peeling and coring 2 large apples. Cut them into 1 cm thick slices.
In a large bowl, mix 200 grams of maida (all-purpose flour), 2 tablespoons of sugar, a pinch of salt, 1 teaspoon of baking powder, and 1/2 teaspoon of cinnamon powder.
In another bowl, whisk 1 egg until frothy. Add 200 ml of milk and 1 teaspoon of vanilla essence to it.
Gradually add the wet ingredients to the dry ingredients and mix well to form a smooth batter.
Heat oil in a kadai for deep frying. Dip each apple slice in the batter, ensuring it's well coated, and then carefully drop it into the hot oil.
Fry the apple slices on medium heat until they turn golden brown on both sides. This should take about 2-3 minutes per side.
Use a slotted spoon to remove the fritters from the oil and drain them on kitchen paper.
Dust the hot apple fritters with powdered sugar and serve immediately.
