Preheat your oven to 180 degrees Celsius.
For the crust, mix 65 grams of crushed biscuits with 35 grams of melted butter. Press this mixture into a small pie dish and bake for about 7 minutes.
For the filling, mix 1 tablespoon of cornflour, 35 grams of sugar, and the zest and juice of 1 lemon in a saucepan. Heat until it thickens, then remove from heat and quickly stir in 1 egg yolk.
Pour the filling into the crust and let it cool.
For the meringue, beat 1 egg white until stiff peaks form. Gradually add 50 grams of sugar while continuing to beat the egg white.
Spread the meringue over the pie, making sure to cover the lemon filling completely.
Bake the pie for about 14 minutes or until the meringue is golden.
