Til Pitha is a traditional Assamese delicacy, made during the festival of Bihu. It is a crispy, sweet roll filled with a mixture of sesame seeds and jaggery, offering a delightful crunch with every bite. Ingredients: Jaggery, Sesame seeds, Glutinous rice

Soak 500 grams of glutinous rice overnight. Drain the water and let it dry. Once dried, grind it into a fine powder.

In a pan, roast 200 grams of sesame seeds until they turn golden brown. Let it cool.

Grind the roasted sesame seeds along with 200 grams of jaggery into a coarse mixture.

Take a small portion of the rice powder, add water and knead it into a dough. Roll it out into a thin disc.

Place a spoonful of the sesame-jaggery mixture in the centre of the disc. Roll it tightly and seal the edges.

Heat a tawa and cook the pitha on low flame until it turns golden brown on both sides.

Repeat the process with the remaining dough and filling. Serve the Til Pitha hot or cold.
