Rinse 50 grams of Gobindobhog rice under running water until the water runs clear. Soak it for 30 minutes.

In a heavy-bottomed pan, bring 1 litre of full-fat milk to a boil. Stir occasionally to prevent the milk from sticking to the bottom.

Drain the rice and add it to the boiling milk. Reduce the heat to low and let it simmer until the rice is cooked and the milk has reduced to half its original volume. This should take about 40-45 minutes.

Add 200 grams of Nolen Gur (date palm jaggery) to the pan and stir until it is completely dissolved.

Cook for another 10-15 minutes until the Payesh thickens to your desired consistency. Remember, it will thicken further upon cooling.

Finally, add a pinch of cardamom powder and mix well. Turn off the heat and let it cool.

Garnish with a handful of chopped nuts before serving.
