Rinse 50 grams of Gobindobhog rice under running water until the water runs clear. Soak it for 30 minutes.

In a heavy-bottomed pan, bring 1 litre of full-fat milk to a boil. Stir occasionally to prevent the milk from sticking to the bottom.

Drain the rice and add it to the boiling milk. Reduce the heat to low and let it simmer until the rice is fully cooked and the milk has reduced to half its original volume.

Add 200 grams of grated Nolen Gur (jaggery) to the pan and stir well until the jaggery is completely dissolved.

Cook for another 10-15 minutes until the Payesh thickens to your desired consistency. Stir occasionally to prevent it from sticking to the bottom.

Finally, add a pinch of cardamom powder and mix well. Turn off the heat and let the Payesh cool.

Garnish with a handful of chopped nuts before serving.
