Ariselu, also known as Athirasam, is a traditional sweet dish from the South Indian cuisine. It is a deep-fried delicacy made from rice flour and jaggery, often served during festivals and special occasions. Ingredients: Rice, Jaggery, Ghee, Cardamom powder

Soak 1 kg of rice in water for 6 hours. Drain the water and let it dry. Once dried, grind it into a fine powder.

In a pan, add 500 grams of jaggery and 1 cup of water. Heat it until the jaggery melts completely.

Slowly add the rice flour to the jaggery syrup, stirring continuously to avoid lumps. Cook until the mixture thickens.

Add 1 tablespoon of ghee and a pinch of cardamom powder to the mixture. Mix well and let it cool.

Once the mixture is cool enough to handle, divide it into small portions and shape them into flat discs.

Heat oil in a pan for deep frying. Fry the discs until they turn golden brown.

Drain the excess oil and let the ariselu cool before serving.
