Start by chopping 4 ripe tomatoes and a handful of fresh basil leaves finely. Keep them aside.
Take a loaf of Italian bread, cut it into 1 cm thick slices. You should get around 10 slices.
Drizzle some olive oil on both sides of each bread slice and toast them in a preheated oven at 180 degrees Celsius for about 10 minutes or until they turn golden brown.
In a bowl, mix the chopped tomatoes, basil, 2 cloves of minced garlic, 1 tablespoon of olive oil, and salt to taste. Let this mixture sit for about 10 minutes to allow the flavours to meld together.
Once the bread slices are toasted, rub a clove of garlic on the toasted side of each slice for added flavour.
Top each slice with the tomato-basil mixture.
Serve immediately to enjoy the crunch of the bread and the freshness of the tomatoes and basil.
