Start by boiling 500 grams of sweet potatoes until they are tender. This should take about 15-20 minutes.
While the sweet potatoes are boiling, chop 1 large onion, 2 green chillies, and a handful of fresh coriander leaves.
Once the sweet potatoes are boiled, peel them and cut into small cubes.
In a large bowl, combine the sweet potatoes, chopped onion, green chillies, and coriander leaves.
For the dressing, mix 2 tablespoons of olive oil, 1 tablespoon of lemon juice, salt to taste, and 1 teaspoon of black pepper in a small bowl.
Pour the dressing over the salad and toss well to combine.
Refrigerate the salad for about 30 minutes before serving to allow the flavours to meld together.
