Take 200 grams of sweet corn kernels and blend half of them in a mixer to make a coarse paste.

Heat 2 tablespoons of oil in a deep pan, add 1 finely chopped onion and sauté on medium heat until it turns translucent.

Add 1 tablespoon of finely chopped garlic and sauté for a few seconds.

Add the sweet corn paste and the remaining whole sweet corn kernels to the pan.

Mix well and cook for 2-3 minutes, stirring occasionally.

Add 1 litre of vegetable stock to the pan and bring it to a boil.

Lower the heat and let it simmer for 10-15 minutes.

In a separate bowl, mix 2 tablespoons of cornflour with a little water to make a smooth paste.

Add this cornflour paste to the soup, stirring continuously to avoid lumps.

Cook on medium heat for another 5 minutes until the soup thickens.

Season with salt and pepper as per taste.

Serve hot garnished with spring onion greens.
