Stir-Fried Green Beans with Coconut is a delightful South Indian dish that combines the crunchiness of green beans with the richness of coconut. Wash 500 grams of green beans thoroughly and cut them into 1-inch pieces.

Heat 2 tablespoons of oil in a pan over medium heat. Add 1 teaspoon of mustard seeds and let them splutter.

Add 1 teaspoon of urad dal and fry until it turns golden brown.

Add 1 finely chopped green chilli and a few curry leaves. Sauté for a few seconds until the chilli changes colour.

Add the chopped green beans to the pan. Stir well and cover the pan. Cook on low heat for about 10 minutes until the beans are tender.

Add salt to taste and 1/2 cup of grated coconut. Mix well and cook for another 2-3 minutes.

Turn off the heat and serve the Stir-Fried Green Beans with Coconut hot.
