Peel and chop 500 grams of potatoes into small cubes.

Finely chop 200 grams of spring onions.

In a large pan, heat 2 tablespoons of oil. Add the chopped spring onions and sauté until they become soft.

Add the chopped potatoes to the pan and stir well. Cook for about 5 minutes.

Pour in 1 litre of vegetable stock and bring the mixture to a boil. Reduce the heat and let it simmer for about 20 minutes or until the potatoes are soft.

Use a hand blender to puree the soup until it is smooth.

Season with salt and pepper as per taste. Stir well.

Serve the soup hot, garnished with a few chopped spring onions.
