Rinse 200 grams of basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

Heat 2 tablespoons of ghee in a pan over medium heat. Add 1 teaspoon of cumin seeds and let them splutter.

Add 1 finely chopped onion to the pan and sauté until it turns golden brown.

Add 1 cup of chopped spring onions (both the white and green parts) to the pan and sauté for a few minutes.

Add 1 cup of fresh or frozen peas to the pan and stir well.

Add the drained rice to the pan and gently stir to combine all the ingredients.

Add 2 cups of water, 1 teaspoon of salt, and 1/2 teaspoon of garam masala to the pan. Stir well, then cover the pan and let it cook on low heat for about 15-20 minutes, or until the rice is cooked and all the water is absorbed.

Fluff the rice gently with a fork before serving.
