Take 200 grams of sweet corn kernels and boil them in water for about 10 minutes. Once boiled, drain the water and keep the corn aside.
In a large bowl, add 100 grams of gram flour (besan), 2 finely chopped green chillies, 1 teaspoon of red chilli powder, 1/2 teaspoon of turmeric powder, salt as per taste, and 1/2 teaspoon of baking soda. Mix all these ingredients well.
Now, add the boiled corn kernels and 100 grams of finely chopped spring onions to the mixture. Mix well to ensure that the corn and spring onions are well coated with the besan mixture.
Heat oil in a kadai for deep frying. Once the oil is hot, drop spoonfuls of the mixture into the oil and fry until they turn golden brown.
Drain the fritters on a paper towel to remove excess oil. Serve hot with ketchup or chutney.
