Start by finely chopping 100 grams of spring onions.

Take 200 grams of cheese (preferably mozzarella or cheddar) and grate it.

Heat a non-stick tawa and place a tortilla (about 20 cm in diameter) on it.

Sprinkle a generous amount of the grated cheese evenly over half of the tortilla.

Spread the chopped spring onions over the cheese.

Fold the tortilla in half over the cheese and spring onions to form a semi-circle.

Cook on medium heat until the tortilla is golden brown and crispy, and the cheese has melted. This should take about 2-3 minutes on each side.

Repeat the process with the remaining tortillas, cheese, and spring onions.

Cut each quesadilla into wedges and serve hot with salsa or sour cream.
