Spaghetti with Roasted Vegetables is a delightful Italian dish with an Indian twist. Preheat the oven to 200 degrees Celsius.

Chop 200 grams of mixed vegetables like bell peppers, zucchini, and carrots into bite-sized pieces.

Toss the vegetables in 2 tablespoons of olive oil, salt, and pepper. Spread them on a baking tray and roast in the oven for about 20 minutes or until they are tender and slightly charred.

Meanwhile, cook 200 grams of spaghetti as per the instructions on the packet. Drain and keep aside.

Heat 2 tablespoons of olive oil in a pan. Add 2 finely chopped garlic cloves and sauté until they turn golden brown.

Add 200 grams of tomato puree, 1 teaspoon of red chilli flakes, salt to taste, and cook for about 10 minutes until the sauce thickens.

Add the roasted vegetables and cooked spaghetti to the sauce. Toss well to combine.

Garnish with freshly chopped basil leaves and serve hot.
