Boil 500 grams of spaghetti in a large pot of salted water until it is al dente. Reserve 1 cup of pasta water and then drain the spaghetti.

In a large pan, heat 60 ml of olive oil over medium heat. Add 8 cloves of thinly sliced garlic and cook until it is lightly golden.

Add 1 teaspoon of red chilli flakes and cook for another minute.

Add the drained spaghetti to the pan. Toss well to coat the spaghetti in the garlic oil. If the pasta seems dry, add some of the reserved pasta water.

Season with salt as per taste. Garnish with 2 tablespoons of chopped fresh parsley and serve hot.
